All Things Delicious: Your favorite Holiday Recipe!

Do you have a recipe that your family and friends consistently “RAVE” about? This caramel popcorn recipe is that recipe at my house. I got the recipe from my talented, amazing, and beautiful sister Natalie. This recipe is super duper easy, and you are going to LOVE it!!!

Ingredients needed:

1 cup butter (2 cubes)
1 can sweetened condensed milk
2 1/4 cups brown sugar
1 cup corn syrup
3-4 bags of microwaveable “butter” popcorn

Step 1: Melt butter over medium heat on stove top.

Step 2: Add all other ingredients when butter is melted completely.

 
 

Step 3: Stir constantly until all sugar is dissolved, and make sure that all large clumps of brown sugar are broken up.

Step 4: When mixture begins to boil rapidly (not just around the edges, but completely through mixture) stir and cook 30 more seconds and then remove from heat.
 
The mixture should not look like this….it isn’t boiling enough in this picture. 
 

This is a better picture of what a full boil looks like. After it reaches a full boil, stir for 30 more seconds on the heat, and then remove from the heat.
WARNING: If you overcook the caramel, it will not stay soft and chewy. (Speaking from experience here).

Step 5: Pop your popcorn in the microwave, and dump it first into a medium sized bowl. Begin transferring the popcorn into an extra large bowl with your hands by scooping the popcorn out carefully. If you do this slowly, you will separate the popped popcorn from the un-popped kernels.

 

Discard the left over kernels, and repeat for all 3-4 bags of popcorn.

Step 6: Pour over 3 (can do 4 but I like mine to be heavily coated) bags of “butter” flavor popcorn. (not movie theater butter, or extra butter, just plain “butter” flavored.

Step 7: Carefully stir your mixture until all popcorn is evenly coated.

 
 
 
 
 
 
 
 
 
 

Step 8: Enjoy! Wait to cool off before eating!

  1. So I made this tonight and perhaps I did something wrong but my caramel was chewy and didn't really "harden" – is that how it's supposed to be?? Any tips? It was still fantastic but very sticky!

  2. It is meant to be soft and sticky. šŸ™‚ Feel free to cook it longer if you prefer it to be hard. I'm glad u liked it!!

  3. I just had to tell you that I made this tonight and almost cried – it was SO DELICIOUS!
    My grandmother used to send us home made caramel corn every Christmas – this was a lovely treat that reminded me of her. I can't wait to share it with my little ones tomorrow!
