Lemon Cookie Recipe
Ok peeps if you are like me, you decide to make a back to school treat about 10 minutes before the kids arrive home. So, if you have a cake mix on hand, this recipe is for you. Today was the first day of school and my kids were getting home at 3:45. I looked at the clock at 3:30 and thought, “Man I should make them a ‘back to school’ treat.” So, I whipped out my game face and the ingredients and no joke I had a batch done and cooling before whey walked in the door. Now, THAT’S my kind of recipe.
Here is what you need:
1 lemon cake mix {I like Betty Crocker best} The truth is…you can use whichever kind of cake mix you have on hand!
1/3 cup oil
2 eggs
Preheat the oven to 350 degrees.
Mix the ingredients with a hand mixer until it is well blended
Spoon onto a cookie sheet.
Bake for 10 minutes.
Place cookies on a cooling rack and dust with powdered sugar.
Voila! You have made the easiest cookies on the planet.
If you want to get all fancy on me, add white chocolate chips before baking. 🙂

I'M a self tought cook,and baker.I too bake lots of sweet goodies.But always looking for easy recipes,for a quik deserts.So love this idea of cake box lemon or any flavored .I also have made semi-homemade with a twist using a cake box.Just used better croker confec,and sprinkles for my grandbabie birthday party .It was awseome,i topped with her favorite whipcream frosting,homemade only.And topped with rainbow of sprinles.WOW ALL THE CHILDREN LOVED IT.For the lemon cookies also made of a box,but doctor it upI ADD LEMON ZEST AND ALSO CREAMCHEESE FROSTING WHIPPED FRESH LEMON JUICE AND LEMON ZEST SPRINLE ON TOP OF THE COOKIES.YUMMY FOR OUR TUMMIES.LOVE GRANMES.(HAPPYCOOKDIVA.:)?????
