Black Bean Fiesta Crock Pot Casserole

My 11-year-old daughter called this casserole the “best meal in the entire world.” She might not have the most mature tastebuds, but it made me feel good nevertheless.

Black Bean Fiesta Casserole

Ingredients:

10 chicken tenders {I add them right out of the frozen freezer bag}

8 oz cream cheese

8 oz sour cream

1 cans cream of chicken soup

1 packet of Ranch Dips Fiesta Packet

1 can of black beans {drained}

1 can of whole kernel corn {drained}

1 box of bow tie pasta

Add the chicken, cream cheese, sour cream, cream of chicken, and the fiesta ranch packet into the crock pot. Stir occasionally and cook on high for about 3 hours {time may vary based on your crock pot}. After your chicken is cooked thoroughly, boil 1 box of bow tie pasta according to directions on the box and add the cooked pasta to the chicken mixture. Next, drain your black beans and corn and add to the chicken mixture.

  2. This is probably a stupid question, but do you use frozen already cooked breaded tenders, regular frozen grilled already cooked chicken tenders, or frozen raw chicken tenders? This sounds delicious and I want to try it ASAP, just want to make sure I’m using the right chicken in it.
