I love cookies. In this house the favorite varies depending on who you talk to. For me, I prefer something with a little chocolate, but not to much. The hubs on the other hand loves oatmeal raisin & the kids always go for the sugar cookies. So since I’m not always in the mood, nor do I have time- to mix, chill, roll, bake & decorate- I came up with a simplified version of my favorite recipe that is perfect. It’s as easy as a drop cookie, but gives you all that wonderful sugar cookie flavor you love. I like to roll them so they stay uniform in shape & just add a little squiggle of icing on top to add a little sweetness & color. But it’s not too much that it takes a whole lot of time like a traditional icing. Simple says it all.

Boy the family was sure happy when I perfected these. Now they don’t have to wait so long in-between each time I make sugar cookies. With as easy as these are – I can whip them up quickly & enjoy them for all occasions. They work great for taking to backyard BBQ’s or potlucks & church socials. Change out the color of the frosting & you can make them for any holiday. Perfect – just perfect.

You know, these would be great cookies to leave out on Christmas Eve in a couple days. I know Santa would love to have a delicious snack like these! Whip some up with the kids. They will treasure those memories for years to come.

Simple Sugar Cookies

Ingredients

  • 3 1/2 cups Sifted All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 1/2 cups Sugar
  • 2 Eggs
  • 2 sticks 1 cup Butter
  • 2 tsp Vanilla Extract
  • 1/4 cup Sugar to coat
  • Icing:
  • 1 cup Confectioners Sugar or more to get a thicker consistency
  • 1 1/2 tbsp Water
  • 3-4 drops Food Coloring
  • Colored Sprinkles Sanding Sugar- optional

Instructions

  1. Cookies:
  2. In a bowl, stir together flour & baking powder. Set aside.
  3. In mixer bowl, beat together butter & sugar until fluffy.
  4. Beat in eggs & vanilla.
  5. Stir in flour mixture, a third at a time to make stiff dough.
  6. Preheat oven to 350 degrees
  7. Scoop a ball of dough, roll into a ball & roll in sugar to coat.
  8. Bake on non-stick cookie sheet for 8 minutes
  9. Cool completely on pan before transferring to a wire rack
  10. Icing:
  11. In a small bowl, mix sugar & water to form a thick, smooth icing. Adding more sugar as needed.
  12. Stir in food coloring to desired shade.
  13. Transfer to piping bag & decorate as desired.
  14. Let dry completely before stacking
