Delicious Cowboy Caviar

Hey there friends! Today I have the yummiest recipe to share with you! It’s my go-to appetizer and is so easy. I like to make it first thing in the morning so that it has all day to sit and “marinate” {although it isn’t necessary} I just think it tastes better! We love to make it when we go camping, for fun get-together’s and dinner parties. But truthfully, it’s good anytime!

Cowboy Caviar

Prep Time 45 minutes

Ingredients

1 can each of the following

  • black-eyed peas
  • kidney beans
  • black beans
  • white corn
  • yellow corn

You will also need

  • 2 stalks of celery chopped
  • 1 small red onion

1/4 each of the following

  • orange bell pepper
  • red bell pepper
  • yellow bell pepper
  • green bell pepper

Then cut

  • 1/2 jalapeno diced using little to no seeds
  • 1/4 habanero diced

Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup rice vinegar
  • 1/2 cup sugar
  • 1/4 clove garlic minced
  • 1/2 cup canola oil
  • 1 tsp pepper
  • 1 tsp salt

Instructions

  1. Open, drain and rinse all of your canned ingredients.
  2. Put in a large bowl.
  3. Add chopped peppers and onion, set aside.
  4. Add all of the ingredients for your dressing into a quart-size sauce pan.
  5. Bring it to a boil, then let boil for 2 minutes.
  6. Remove from heat and let it cool.
  7. Once cool to the touch, pour over mixture.
  8. Mix to coat.
  9. Serve with tortilla chips.

Recipe Notes

Great tip: I love this after it has sat so make it the night before or first thing in the morning!
