Hi my friends! It’s Gina from Kleinworth & Co. I hope you had a wonderful holiday season. We did and decided to really hone in and focus on the family more. It is so easy to let life get in the way of what is important and it’s high time to get back to the basics. One thing I used to do all the time that I am going to get back to doing is making a homemade breakfast for the kids. As they got old enough to make their own breakfast, I spent less time in the kitchen preparing delicious things for them to enjoy in the mornings. One of our favorite homemade breakfast recipes is Banana Coconut Donuts. They are so easy to make and we can’t get enough.

I used to make these on a Friday afternoon so we would have them for our weekend mornings. I am definitely committed to doing that again & will be whipping up a batch tomorrow. I love this recipe because it is a great way to use up those over-ripe bananas.

 

Banana Coconut Donuts breakfast recipe

So it starts with the homemade banana mini donuts. But then we make a standard donut glaze and top them with sweetened coconut. I don’t know about you, but I love a good banana-coconut combo. Those flavors compliment each other so well. It definitely gives a tropical vibe, which is so welcome this time of year when the snow is piling up and no one wants to go outside.

Baked Donut Recipe

Now, I make these with a little mini donut maker I picked up in the clearance aisle at Target several years ago. It was the best $20 and I have definitely got my monies worth out of it. But you can use this recipe in a regular donut pan and bake them in the oven too. Just bake at 350 for 9-12 minutes. But I have to say, the donut maker is so much easier in my opinion. Plus the mini donuts not only are fun, but there’s a little less guilt that comes along with having a smaller portion.

You could change them up and do a chocolate glaze and top with nuts if you want to mix it up a bit. My kids just love these donuts. They are great with coming up with new & creative combos when it comes to topping these donuts. I think it’s great to get the kids involved in the cooking process whenever possible.

Banana Coconut Donuts

Start your day off with the tropical flavor of these Banana Coconut Donuts that are an easy baked donut recipe. Perfect for weekend mornings.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 tsp baking powder
  • 1 cup + 2 tbsp butter melted
  • 4 overripe bananas
  • 1 cup milk
  • 2 eggs lightly beaten

Glaze

  • 1 cup confectioners sugar
  • 2 tbsp milk
  • 1 cup shredded sweetened coconut

Instructions

  1. Pre-heat your donut machine or your oven to 350 degrees.
  2. Combine dry ingredients in large bowl. Make a well in the center.
  3. Whisk in melted butter, bananas, & milk until combined. Add eggs- whisk until it forms a smooth batter.
  4. Transfer to a small pitcher. (it's a bit too thin for a piping bag)
  5. Spray your donut maker or donut pans with cooking spray.
  6. Pour in your batter filling to the top of the pan for the donut maker or 2/3 full for a standard pan.
  7. Cook 6-7 minutes in the donut maker or 9-12 minutes in the oven for the standard sized donuts.
  8. Remove & let cool to a temperature so that you can handle them. 

Glaze

  1. Combine glaze ingredients and whisk well.

  2. Dip the donuts in the glaze & decorate with coconut.
