Gen’s Famous Chicken Lasagna

One of my new neighbors, Gen Dalley brought us a surprise dinner a few weeks after we moved in to our dream house, and Creed especially was EXTRA impressed. For weeks after, he begged me to get the recipe to his “new favorite food” from Gen. So, I tracked it down, and now it’s a staple at our house. In fact, It even made an appearance at Lake Powell this year! It’s delicious! Just know that the Alfredo sauce recipe makes a ton, so plan on making at least 2 pans of lasagna if you make it.

Alfredo Sauce

Alfredo Sauce

Ingredients

  • 4 cups whipping cream
  • 2 cups milk {I use 1%}
  • 2 cubes chicken bouillion {Or 2 tsp}
  • 8 oz cream cheese
  • 1/4 cup butter {1/2 cube}
  • 1/2 cup milk
  • 2 Tbsp Corn Starch
  • pepper to taste

Instructions

  1. Put the butter and cream cheese in a sauce pan on low heat until it is melted. 

  2. Add whipping cream, 2 cups of milk, the bouillion, and pepper. 

  3. Cook on medium heat for about 5 minutes, making sure to stir the bottom to prevent it from burning. 

  4. In a small cup, add 1/2 cup milk and cornstarch an stir really well and add it to the sauce. {This will thicken the alfredo}

  5. Continue to stir and cook for 5 more minutes on medium/low heat

Chicken Lasagna

This recipe makes 2 pans 9x13 size

Ingredients

  • 2 packages lasagna noodles {boiled}
  • 2-3 pounds chopped seasoned chicken I use rotisserie chicken from Costco. Then I sautéed it in butter or olive oil, 1 tsp Italian seasoning, 1 tsp garlic powder, and 1 tsp onion powder.
  • 1 batch Gen Dalley Alfredo Recipe
  • 1 large bag mozzarella cheese
  • 1 1/2 cup grated parmesan cheese

Instructions

  1. Make Alfredo recipe first

  2. Boil lasagna noodles

  3. Put a thin layer of Alfredo in the bottom of a 9X13 pan

  4. Follow the sauce with a layer of lasagna noodles

  5. Follow with another layer of sauce, moz cheese, parm cheese, and sprinkle with seasoned chicken

  6. After the chicken, start over with another layer of noodles. 

  7. You only need two layers of chicken, so on the other layers, just do noodles, sauce, and cheese. 

  8. Top with plenty of cheese, cover with foil, and bake at 375º for about 25 minutes. 

  9. Uncover and continue to bake for 5 more minutes until the cheese is slightly browned
