Golden Graham S’more Mix

Hey hey! Happy Thursday friends! Jo here! It is almost September, kids are in school, football has started and I am so ready for FALL! Just give me all the hoodies and boots and pumpkins! I know I say this about every season but I think fall is my favorite! Ha! However here in good ol’ Southern Utah temps are still in the high 90’s and sweat shirts are no where in sight! Lame. 

So to keep the summer vibe alive, I am sharing with you a suuuuuper yummy treat! This one definitely isn’t new to the recipe scene but it has become a regular request at our bookclub! And thanks to Alise for sharing her super {secret} amazing tip with us! And lucky for you, I am going to share it today as well! Woot! I make this more like a mix than a bar which I know is a popular choice as well.

Golden Graham S'more Mix

Ingredients

  • 1 10 oz bag Mini Marshmallows {about 6 cups} Reserve 1 cup
  • 1 12 oz bag Semi-Sweet Chocolate Chips
  • 1 12 oz box Golden Grahams {about 8 cups}
  • 1/2 c Butter
  • 1 tsp Vanilla
  • 1 cup Shredded Coconut

Instructions

  1. Before you begin, grease or line your cookie sheet with parchment paper. 

  2. Next, place your bag of chocolate chips in the freezer. {If you skip this step, your chips will melt as soon as you add them to the cereal mixture!} 

  3. Measure your cereal into a large bowl, add your coconut and set aside. 

  4. Melt your butter in a pot. Once butter is melted, add 5 cups of marshmallows. 

  5. Stir until almost melted, then add vanilla. 

  6. Remove from heat and pour on cereal mixture.

  7. Stirring to coat cereal and coconut. 

  8. Get chocolate chips out of the freezer and add to cereal. 

  9. Continue to stir and then add your reserved cup of marshmallows. 

  10. Gently stir until all evenly coated and mixed together. 

  11. Pour onto your prepared cookie sheet and break into pieces. 

  12. ENJOY!

  1. This looks amazing! If I don’t have parchment paper but have silicone baking mats that.I can place on my cookie sheets, do you think that would work? Crossing my fingers!!!

  3. Has anyone tried using milk chocolate chips instead of semi—sweet? Just curious if it would be good or make it too sweet…
