3T Yeast, 1/2 c sugar, 5 c. Bread Flour, 6 c. warm water {Mix 2 minutes in Bosch Mixer with a dough hook}
Cover the bowl with a damp towel and let it rise until double in size {about 1 hour}. Poke the dough with your finger, if the dough is ready, the poke will stay in. If it needs to rise longer, the hole will go away immediately.
