Basil Pasta Salad

A deliciously fresh pasta salad, perfect for summer!

Ingredients

  • 8 ounces bowtie pasta
  • 2 medium avocado's coarsely chopped in bug chunks {totally optional}
  • 6 strips of bacon cooked and crumbled
  • 2/3 c chopped fresh basil; cut off stem and chopped very fine
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 3 cloves mince garlic
  • 1/4 c shredded parmesan cheese
  • 1/4 tsp pepper
  • 1/8 tsp salt

Instructions

  1. Cook and drain pasta according to package.
  2. In another bowl, combine all the ingredients except bacon- add that last. Mix all together, then sprinkle with your parmesan cheese.
  3. Enjoy!

Recipe Notes

This salad is only good for about 24-36 hours. I like to make it just a couple hours prior just so it has time to set up but is still fresh!
