Strawberry Spinach Wonton Salad

Ingredients

  • 1 package spinach
  • 1 head red leaf lettuce
  • 12 {at least} wontons cut into strips when you fry them
  • 1/4 c. cooked chopped bacon
  • 1/2 c. finely chopped red bell pepper
  • 1 red onion chopped
  • 1 c. sliced strawberries
  • 1 c. sugared almonds

Dressing

  • 1/4 c. red wine vinegar
  • 1/3 c. sugar
  • 3/4 c. oil
  • 1 tsp dry mustard
  • 3/4 tsp salt
  • 3/4 c. strawberry jam

Instructions

  1. Cook the bacon and crumble
  2. Cut the wontons into strips, fry them in oil and set aside
  3. Sugar the almonds by heating 3 Tbsp of sugar in a pan with almonds on medium-high heat {stir continuously}
  4. Mix dressing ingredients
  5. Add all ingredients together in a large bowl
  6. Add wontons right before serving.
  7. Toss
