Chocolate Peanut Butter Sandwich Cookies

Ingredients

  • 1 ¼ cup all-purpose flour
  • ½ cup cocoa powder
  • ¼ cup oats lightly ground
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ¾ cup 1 ½ sticks butter, room temperature
  • 2 Tbsp Nutella
  • 1 ½ cup granulated sugar
  • 1 egg
  • Coarse sea salt

Filling

  • 1 cup peanut butter

Instructions

  1. Preheat oven to 375°F.
  2. Line baking sheets with parchment paper - set aside.
  3. Whisk together flour, cocoa powder, oats, baking soda & baking powder. Set aside.
  4. Beat together butter, Nutella & sugar until light & fluffy.

  5. Mix in egg.
  6. Slowly add in flour mixture until evenly incorporated.
  7. Roll dough into tablespoon-sized balls.
  8. Flatten balls with the bottom of a glass & sprinkle with sea salt.
  9. Bake for 8-10 minutes.
  10. Cool for 3 minutes on a baking sheet & transfer to a cooling rack.

Assembly

  1. Allow cookies to cool completely.
  2. Spread peanut butter between two cookies to made sandwich.

Recipe Notes

Cookies can be stored for up to 5 days in an airtight container.
