Easy Breakfast Breakfast Burritos

These are so yummy, kid friendly and can be frozen! 

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 3 cups shredded hash browns
  • 10 slices chopped bacon
  • 12 large eggs
  • 8-10 flour tortillas
  • 1 c diced deli ham
  • 2 c shredded cheese {whatever kind you like}
  • 1/4 c milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook potatoes according to package and then set aside. 

  2. Cook bacon until done and then crumble. {Or used precooked bacon which is my personal favorite!}

  3. In a mixing bowl, gently beat eggs, milk, salt and pepper.

  4. Cook your eggs over medium heat, until completely cooked. Set aside.


  5. In a large bowl, combine cooked potatoes, cooked eggs, bacon, diced ham and shredded cheese. Don't over mix.


  6. Once that is combined, place 1/2 cup of mixture onto the center of your tortilla. Roll them up tightly and then place seam side down onto greased cookie sheet.


  7. If you make extra to freeze {which I recommend} place the rolled burritos directly into a ziplock bag. You can freeze these for up to 3 months.


  8. When ready to eat frozen, just pop them in the microwave for 2 minutes on high, flip, then repeat for another 2 minutes.

     

  9. Or you can also bake them at 375 for approx 20 minutes.

Recipe Notes

  • Just plan on making extra... you might as well since you're already going to the trouble of making a batch. Plus they will FOR SURE get eaten

  • We love to dip these in taco sauce or sour cream. So good!

  • Make sure to try these using other ingredients as well. ie. veggies, sausage, different cheeses!
