These are so yummy, kid friendly and can be frozen!
Cook potatoes according to package and then set aside.
Cook bacon until done and then crumble. {Or used precooked bacon which is my personal favorite!}
In a mixing bowl, gently beat eggs, milk, salt and pepper.
Cook your eggs over medium heat, until completely cooked. Set aside.
In a large bowl, combine cooked potatoes, cooked eggs, bacon, diced ham and shredded cheese. Don't over mix.
Once that is combined, place 1/2 cup of mixture onto the center of your tortilla. Roll them up tightly and then place seam side down onto greased cookie sheet.
If you make extra to freeze {which I recommend} place the rolled burritos directly into a ziplock bag. You can freeze these for up to 3 months.
When ready to eat frozen, just pop them in the microwave for 2 minutes on high, flip, then repeat for another 2 minutes.
