Skinny Caramel Popcorn

Hi All! It’s Gina from Kleinworth & Co. This time of year I’m all about the caramel & it’s really bad if it’s salted caramel. I just can’t get enough. So since I’m doing the whole point thing I have to watch how much of the good stuff I’m making around here. But I still like to have my evening treat. I typically make plain popcorn in the air popper & that does just fine. But sometimes I really want something more decadent. So I came up with a skinny caramel popcorn recipe that I just love. It’s simple to make, cuts the calorie intake & really helps get rid of those cravings for something sweet.

Skinny Caramel Popcorn

It’s as easy as heating a few ingredients on the stove & then whisking in a few others before pouring it over a bowl of salty popcorn. It’s so good & I love that it’s so incredibly easy too! I made this recipe perfect for the whole family, because really- everyone wants some every time I make this. It definitely passes the teenager test, which you know is hard to do when it comes to skinny versions of old favorites. They love this just as much as my usual caramel popcorn & I love that they often request this over other treats. Makes it really easy to stick to the points & not go over each day. It also helps them want to jump on board & watch what they eat too. I think it’s great that they are mindful of what they eat at their age, even when they don’t really have to be. It’s a great habit to form early.

Skinny Caramel Popcorn

The mix-ins are great too. With regular caramel popcorn, I would mix in some chocolate covered candy or marshmallows – or both. I have been known to mix in all sorts of things – but you know, this was just as good & I didn’t feel like I was missing out on any of that.

 

Skinny Caramel Popcorn

Ingredients

  • 6-8 cups air-popped porcorn
  • 1 cup yogurt covered raisins
  • 1 cup trail mix of choice
  • 1/2 cup coconut oil
  • 1/2 cup raw honey
  • 1/2 tsp salt
  • 1-1/2 tsp vanilla extract

Instructions

  1. Starting with the sauce
  2. Combine coconut oil & honey in small sauce pan & heat on medium until coconut oil is melted & the two are blended.
  3. Remove from heat
  4. Add salt & vanilla - stir & set aside to cool
  5. Meanwhile- pop popcorn & place in a large bowl
  6. Add your desired mix-ins
  7. Once your "caramel" is cooled slightly it will look like thicker, milky honey
  8. Pour over your popcorn mix & stir to coat evenly
  9. Enjoy!
