Best Chicken Caesar Salad {Perfect for a baby shower}

I can’t believe I am to the age where I don’t get to throw baby showers very often anymore! Ha! It is so weird! Anyway, a few years ago I felt like they were every weekend and there were a couple that I got to throw as well! When I was in charge,  I served the same food at both showers and people just ooooo’d and aaaaaah’d over it!!

The best part about it was that is was SUPER easy.

I got the idea from Pizza/Pasta Factory’s Chicken Caesar Salad because I LOVE IT so much.

To make your own version all you need is:

  • Rotisserie chicken {cut off the meat and cube it, but do it while it is still warm or the meat will be harder to get off the chicken}
  • Grape tomatoes
  • Bow-tie pasta {cooked and drained}
  • Sliced mushrooms
  • Romaine lettuce {I buy the 5 pack at Costco for around $3.50 and chop it}
  • Grated Parmesan cheese
  • Croutons
  • Brianna’s Asiago Caesar Dressing. {My friend Jo tipped me off about the dressing, and it is to. die. for. delicious. It totally makes the salad in my opinion.}

Just throw a little of it all onto a plate and dive in.

And it is super duper easy to serve because almost everything can be prepared ahead of time!

Plus I served these easy bread sticks that I already posted about too. Ummmm, I’m telling ya peeps, you should make the bread sticks. I whipped up three pans with my Bosch mixer in less than about 30 minutes {not including rising time}. If you don’t have a Bosch, I promise you won’t regret it if you buy one. I use mine to make whole wheat bread ALL THE TIME. My friends and family LOVED the food, and I was so proud of myself. I am LOVING cooking lately, and by the end of the weekend, my Sister-in-law Aubrey {who we call Martha because she is such a good cook} started calling me Betty {like Betty Crocker}. It was a proud moment.

 

Oh, and for dessert, we had these amazing brownies!

  3. Made the pasta salad this past weekend and got rave reviews and requests for the recipe! The Brianna dressing definitely made it! The one change I made was I substituted marinated artichoke hearts for the mushrooms (because I’m not a fan of mushrooms and I’m in love with artichoke hearts). Thank you for the recipe!

  4. I love this salad! I’ve always bought my dressing from Pasta Factory to make this, I’ll have to try Briannas as I love all the other flavors.

  5. My meat loving husband was not thrilled when this was put on the dinner menu, but he LOVED it. We all did. We’re still talking about it a week later. I think it would also make for a perfect picnic food. Thank you for the recipe!
