White Bean Chicken Chili {Recipe by Brooke}

The pretty pumpkin soup server bowl is from BHG at Walmart. If you know how much we love pumpkins, I’m sure you aren’t surprised that I bought it. 🙂 The pretty white dishes are also BHG, and the jute place-mat too {I couldn’t find it on their website, but the place-mats were right by the seasonal items at my Walmart}. 

Chicken-White-Bean-Chili-2Almost every time I make this soup, I get asked for the recipe. It’s easy to feed a lot of people with it too. It’s what I always serve at our pumpkin carving party every year.

White Bean Chicken Chili

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 Rotisserie Chicken
  • 1/2 onion, sauteed in olive oil
  • 32 oz chicken stock
  • 2 cans white beans {undrained}
  • 1 can green chilies
  • 1/2 tsp dried cilantro
  • 1/8 tsp crushed red peppers
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp cumin
  • Juice from 1 lime

Instructions

  1. Chop 1/2 onion and saute it in a large stock pan

  2. Remove chicken from rotisserie and cut up into small pieces

  3. Add chicken to the onion

  4. Add remaining ingredients

  5. Simmer on stove top for 25 min

Recipe Notes

Serve with sour cream, cheese, avocado, tortilla chips, diced tomatoes.
