White Chocolate Macadamia Nut Cookies

Hi my friends! It’s Gina from Kleinworth & Co. Are you ready for fall? We are still trying to soak up some of the last little bit of nice weather around here. But that doesn’t mean we aren’t jumping into fall recipes. One of my favorites, that isn’t necessarily a fall recipe, but more for back to school, is White Chocolate Macadamia Nut Cookies.

I don’t know what it is about this season, but I really crave a good White Chocolate Macadamia Nut Cookie. I would venture to say they are my all-time favorite cookie recipe. That was actually really hard to say because there are few cookies I don’t like. So picking an actual favorite is tough. That being said, if I were to have a plate full of assorted cookies in front of me, the White Chocolate Macadamia Nut Cookies would be the first ones I would grab. So I guess that means they top my list.

 

White Chocolate Macadamia Nut Cookies

These cookies are easy to make, which means that they are perfect for enjoying when the kids get home from school. This recipe doesn’t require any chill time, which is great when you forget to plan ahead. Think about it, how often do you really plan out making cookies? I know I don’t, which is why this particular recipe is so good. I like to bake when the mood strikes me, and that is usually at a time when I really can’t wait several hours or until the next day to finish up the baking process. So if that sounds familiar to you, this recipe will be your new favorite.

White Chocolate Macadamia Nut Cookies

Now, this recipe calls for white chocolate chips. You can also use white chocolate chunks or even white chocolate candy melts chopped up if that is what you have on hand. I like to keep it versatile as best I can & use whatever I have on hand at the time. I have made this recipe with all of those variations with great results.

You could make these cookies for your next potluck or party & they make great neighbor gifts too.

White Chocolate Macadamia Nut Cookies

White Chocolate Macadamia Nut Cookies are a quick & easy cookie recipe that the whole family loves. So soft & chewy, you can't go wrong with these!

Ingredients

  • 1 cup butter softened (2 sticks)
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp table salt
  • 1 cup macadamia nuts coarsely chopped
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large mixer bowl, cream together butter & sugars until smooth.
  3. Slowly beat in eggs
  4. Mix in extracts.
  5. Add in flour, baking soda, and salt, beating well.
  6. Fold in the macadamia nuts & white chocolate.
  7. Drop dough by teaspoonfuls onto a parchment lined baking sheet.
  8. Bake 8-10 minutes, or until golden brown.
  9. Add additional chocolate chips on top while cookies are still hot
  10. Transfer to a wire cooling rack after 2-3 minutes & allow to cool to room temperature before transferring to an airtight container.
