Hi my friends! It’s Gina from Kleinworth & Co. Fall is in full swing and that means I am in full cranberry, cinnamon and pumpkin mode around here. I love baking this time of year and one of our favorite things to make is homemade granola. It makes the house smell amazing and it is just so comforting to have something baking all the time.

I really love making homemade breakfasts as often as I can & it doesn’t have to be difficult, expensive or time-consuming. Things like this quick & easy homemade granola recipe can keep everyone well fed throughout the week. A good breakfast is so important to kick the day off right.

Just look at all that deliciousness in there. My kids just love all the dried cranberries & walnuts that really make this pumpkin granola a favorite in this house. All those fall flavors packed into one little bowl can’t be beaten. I literally can’t make enough of this stuff. Between the kids and the hubs, this batch only lasts a couple days at best.

The best part is that I usually have all the ingredients on hand. When I pick up all my ingredients to make this granola it costs less than $20, which is a bargain for month’s worth of cereal. Fortunately, I usually have all the ingredients on hand, so it is even more economical.

This recipe makes 6 teen size servings & I only used a small fraction of my ingredients. Which really works out great considering that I’m making this a couple times a week. Even better – this recipe is easy enough that my teens can make it themselves.

I highly recommend whipping up a double batch.

Pumpkin Cranberry Granola

Pumpkin Cranberry Granola is a simple to make, homemade granola cereal recipe packed full of pumpkin, dried cranberries & walnuts.

Ingredients

  • 3 cups oats
  • 1 cup dried cranberries
  • 1 cup walnuts
  • 1/4 tsp salt
  • 3 tsp pumpkin pie spice
  • 1/2 cup pumpkin puree not pie filling
  • 1/2 cup raw honey
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 300 degrees & line a baking sheet with parchment paper- set aside
  2. Combine oats, salt & pumpkin pie spice in a large bowl
  3. In a small saucepan, combine pumpkin puree, honey, coconut oil & vanilla
  4. Heat over medium, whisking until it's warm & all ingredients are combined
  5. Immediately pour over oat mixture & stir to coat well
  6. Spread out on prepared baking sheet & bake 25-30 min - stirring half way through
  7. Cool on baking sheet completely before storing
  8. Once cool, toss in cranberries & walnuts & store in an airtight container at room temperature
